Italian Veggie Hash (upgraded version)
By Alaina R. Alexander
This recipe is great for those of us who are trying to cut down on our pasta intake (I am a self-professed pastaholic!) and/or trying to save a few more dollars on groceries.
Italian Veggie Hash (Serves 1 or 2 people)
2 cups of frozen or canned corn (frozen works best)
2 cups of broccoli
2 cups of marinara sauce (or any other type of red pasta sauce)
2 teaspoons of cracked black pepper
Boil the vegetables in the same pan per the instructions on the package
Drain the vegetables in the same colander
Place the vegetables in a pan, add the cracked black pepper and pour in the marinara sauce
Stir ingredients together on a low flame. Cook for at least seven minutes.
Sprinkle some shredded mozzarella on top to give a little extra flavor. This recipe can work as an entrée or a side dish.
